You can turn left over mashed potatoes into delicious potato pancakes. All you need is some flour, an egg or two, and a little oil.
All purpose flour
The exact amount of flour depends on the amount of mashed potatoes you have available, but a good rule of thumb is about 2 tablespoons of flour for each cup of mashed potatoes and one egg for every 3 cups. For example, we had about 3 c of mashed potatoes, so we used 6 T of flour and one egg.
Heat 2 T of cooking oil to a griddle or frying pan. Place pancakes in hot pan and cook for 3 to 4 minutes or until browned to taste. Flip each pancake and cook on the other side. Add oil if necessary to prevent sticking.
