For those of us who are planning a small-scale Thanksgiving with just our nearest and dearest, a large 10-pound turkey might be too much for the table. Who wants leftovers that last weeks? Luckily, bone-in, skin-on turkey breasts are readily available at most grocery stores, and they still have the hallmarks of a traditional Thanksgiving turkey — crispy skin and succulent meat. Plus, at just about five pounds, it roasts evenly. With just a few simple ingredients and three easy steps, this roasted turkey breast is a perfect centerpiece for an intimate holiday meal.


Things You’ll Need

1 small yellow onion, cut into chunks
1 lemon, quartered
4 cloves of garlic, peeled and smashed
2 sprigs of fresh sage
1 (5-pound) turkey breast
1 tablespoon olive oil
1/2 tablespoon kosher salt
1/2 teaspoon black pepper

Step 1: Prep the Turkey Breast for Roasting
Place the onion, lemon, garlic and sage in a roasting pan.

Place the turkey breast on top. Rub the skin with the olive oil. Sprinkle the salt and pepper all over it.

Step 2: Roast the Turkey Breast
Roast the turkey breast at 425 degrees Fahrenheit for 15 minutes. Lower the heat to 350 degrees and continue roasting it for an hour to an hour and 15 minutes, or until the internal temperature reaches 160 to 165 degrees. After, let the turkey breast rest for 10 to 15 minutes.
